Most Asian persimmons are hardy to about 10 degrees Fahrenheit, though some are more cold hardy. They are of two types. The non astringent can be eaten ripe and firm from the tree. The astringent varieties are very sweet and delicious but only after they become very ripe and soft. Often this happens after a frost. Asian persimmon trees are at maturity much smaller than American persimmon trees and are usually kept about 15' tall.
