Why grow your own culinary plants?
The culinary plants Raintree carries exist in a different category from the typical kitchen-garden annual. These are perennial plants — often long-lived shrubs, herbaceous perennials, or woody specimens — that deliver flavor year after year once established. They are grown not for a single-season harvest but as permanent features of an edible landscape, each producing something that is genuinely better at home than anything available commercially.
Real wasabi — the actual rhizome of Eutrema japonica, grated fresh — is almost never what's served in a restaurant; nearly all wasabi paste sold in North America is horseradish-based. Growing your own means tasting the real thing. Fresh-processed tea from home-grown Camellia sinensis, harvested from the same bush season after season, bears little resemblance to commodity tea bags. Mioga ginger buds, used in Japanese cuisine for centuries, are essentially unavailable at retail in most of the US. Capers pickled from fresh-harvested buds have a brightness that bottled product rarely matches. The gap between what you can grow and what you can buy is at least as wide for culinary plants as it is for tree fruit.
These plants also tend to be low-maintenance once established. Rosemary thrives on neglect in well-drained soil. Lavender tolerates drought. Tea camellias, once past their first year or two, ask very little and reward patience. Getting the fundamentals right at planting — site, soil drainage, appropriate zone matching — is the primary investment required.
The single most common failure with culinary plants is zone mismatch. Culinary ginger (Zingiber officinale) is a tropical plant and will not overwinter outdoors in most of the US. Capers are Mediterranean and cannot tolerate sustained cold below about 18°F. Tea camellias (var. sinensis) are borderline in Zone 6 and succeed well from Zone 7 south. Each plant section below specifies USDA zone suitability clearly — read that before purchasing.
Herbs in Raintree's catalog are perennial or semi-perennial plants sold as started plants — not seeds — giving home growers an immediate, established specimen ready to harvest from in the season of planting. Several of the varieties Raintree carries are named cultivars selected specifically for culinary performance, not simply botanical species. This distinction matters: 'Spice Island' rosemary, for example, is chosen for its resinous oil content and flavor intensity, not just its growth habit.
Rosemary — Salvia rosmarinus
Rosemary (formerly classified as Rosmarinus officinalis, reclassified into Salvia by the Royal Botanic Gardens, Kew in 2017) is a drought-tolerant, evergreen Mediterranean shrub that is among the most reliable culinary plants a home grower can establish in Zones 7–10. It requires excellent drainage above all else — rosemary will tolerate dry, poor, rocky soil far more easily than it tolerates wet roots or standing water in winter. Full sun (6+ hours) is essential for best oil development and culinary quality (NC State Extension; UC ANR).

Rosemary performs well in the PNW west of the Cascades in Zone 8 and warmer locations — the mild maritime winters and well-drained soils of the Willamette Valley and Puget Sound lowlands suit it well. In Zone 7 and colder, or in low spots with poor winter drainage, rosemary will struggle or die in cold, wet winters. WSU Extension recommends planting rosemary in raised beds or against a south-facing wall in marginal PNW locations, and mulching the root zone before severe cold spells.

Growing notes: Plant in full sun in well-drained, slightly alkaline to neutral soil (pH 6.0–7.0). Amend heavy clay soils with gravel or coarse sand — rosemary planted in poorly drained soil will decline and die. Water newly planted rosemary regularly through the first season to establish; once established, water infrequently and deeply. Fertilize lightly, if at all — excessive nitrogen produces lush, flavorless growth. Prune lightly after flowering to maintain shape; avoid cutting into woody old stems, which rarely re-shoot. Culinary Sage — Salvia officinalis
Culinary sage is an evergreen to semi-evergreen woody herb native to the Mediterranean region. It is among the most versatile and long-lived culinary herbs for home growers in Zones 5–9, tolerating cold, heat, and drought with equal ease once established in well-drained soil. The volatile oils responsible for sage's characteristic flavor — primarily thujone, camphor, and eucalyptol — are most concentrated in leaves harvested just before or during flowering, typically late spring to early summer (Purdue University New CROP database; NC State Extension).
Raintree carries 'Robert Grimm' sage (Salvia officinalis 'Robert Grimm'), a dwarf culinary sage cultivar that provides the same aromatic intensity and culinary versatility as standard sage in a more compact, manageable form. It is well suited to containers, raised beds, and small-space gardens where standard sage would become oversized.
Growing notes: Full sun (6+ hours) and sharply drained soil — the same requirements as rosemary. Sage thrives in lean soils; over-rich soil reduces oil concentration and flavor intensity. Clip plants back by about one-third in early spring to encourage fresh new growth. Replace plants every 4–5 years as stems become woody and productivity declines. Harvest leaves regularly throughout the season; dry by hanging in small bunches in a warm, airy location.
Lavender — Lavandula species
Lavender's culinary applications have expanded significantly in recent years — flowers and leaves are used to flavor baked goods, confections, herbal salts, syrups, and savory dishes. Culinary lavender uses the same plants grown ornamentally, harvested when flower buds are just opening (not fully open), dried, and used sparingly; lavender's flavor is intense and can overwhelm a dish if overdone. Only culinary-grade dried lavender from chemical-free plants should be used in food (UC ANR; Oregon State University food safety publications).
Raintree carries three lavender selections:
- Lavandula angustifolia 'Hidcote Blue' — English lavender; compact (to about 2 ft); deeply fragrant; excellent for culinary use; hardy to Zone 5. The angustifolia species has the mildest, sweetest flavor and is the preferred type for culinary applications.
- Lavandula × intermedia 'Fred Boutin' — Lavandin (French-style hybrid); grows to about 3 ft; highly fragrant; productive; Zones 6–9. Lavandin has a somewhat more camphor-forward note than pure angustifolia and is used more often for dried arrangements and sachets than food, though its culinary use is common in Provence.
- Lavandula × intermedia 'Bridget Chloe' (PP27,182) — a sport of Lavandula 'Provence'; grey foliage; heat-tolerant; Zones 6–9. Similar culinary profile to other lavandin types.
Growing notes: All lavenders require full sun and excellent drainage — this is non-negotiable. They are among the most drought-tolerant plants in this guide once established. Soil pH of 6.5–7.5 is preferred (slightly alkaline is fine); amend acidic soils with ground limestone. Avoid mulching directly against the crown — crown rot in wet conditions is the primary cause of lavender failure. Prune annually in early spring (not fall) by cutting back by about one-third; do not cut into woody old stems. Harvest flower spikes just before buds fully open for peak culinary and fragrance quality.
For culinary applications, Lavandula angustifolia ('Hidcote Blue') is the preferred species. Its flavor is sweet and floral with minimal camphor notes. Lavandin (L. × intermedia) hybrids have a higher camphor content that is perceptible in food — many cooks still use them, but in smaller quantities. All Raintree lavender varieties are grown without synthetic pesticides and are appropriate for culinary use when harvested from untreated plants.
Woolly Thyme — Thymus praecox 'Lanuginosus'
Woolly thyme is a mat-forming, evergreen ground cover with a softly textured, silvery appearance and a mild thyme fragrance. While primarily planted for its ornamental function — it is exceptionally effective between stepping stones, over rock walls, and as a fragrant lawn substitute — it is edible and can be used in cooking in the same way as culinary thyme (T. vulgaris). Its flavor is milder than culinary thyme. Hardy to Zone 4 (NC State Extension). Requires full sun and sharp drainage; tolerates poor, rocky soils and moderate drought. Grows to 1–3 inches tall and spreads indefinitely as a ground cover.
West Indian Lemongrass — Cymbopogon citratus
West Indian lemongrass is the culinary lemongrass essential to Thai and Southeast Asian cooking — the bulbous, fragrant lower stem is the portion used in curries, soups, and stir-fries, while the leaf blades are used for herbal teas and finely chopped in sauces and desserts. It is not the same plant as East Indian lemongrass (C. flexuosus), which is grown primarily for oil and tea and lacks the bright, lemony culinary character of the West Indian type. Raintree carries the West Indian species specifically for its culinary value (Raintree Nursery product description).
Lemongrass is a tropical perennial that thrives in heat and full sun. It is cold-sensitive — freezing temperatures will kill the top growth and, if sustained, the crown. In most of the US, it is grown as an annual outdoors or as a container plant overwintered indoors. Raintree carries both individual plants and a 6-Pack bundle.
- Hardiness: Perennial only in USDA Zones 9–11; grown as an annual or overwintered container plant in colder zones

In the PNW, treat lemongrass as a warm-season container plant. Grow it in a large pot (5+ gallons) on a south-facing deck or patio during summer, where it will thrive in the heat reflected off pavement and structures. In fall, cut the top growth back to 4–6 inches before the first frost, bring the pot indoors to a cool but frost-free location, and water minimally through winter. Resume regular watering and move back outdoors once night temperatures reliably stay above 45°F.
Harvest: Harvest individual stalks from the outside of the clump by pulling or cutting at the base. Use the lower 4–6 inches of stem (the pale, bulbous section) for cooking; the green tops can be tied into knots and added to soups or used for tea. The plant will continue producing new stalks through the growing season.
This group covers plants grown primarily for their roots, rhizomes, or shoots — harvested whole or processed for flavor, not used as leafy herbs. Several of these are among the most unusual offerings in the Raintree catalog, either because they require very specific growing conditions (wasabi), because they fill a genuine gap in what's commercially available (mioga ginger), or because they are simply rare in US home gardens despite a long culinary history elsewhere (Chinese toon).
Culinary Ginger (Indoor) — Zingiber officinale
Common culinary ginger is a tropical rhizomatous perennial native to Southeast Asia. It is the ginger of commerce — the root sold in every grocery store — and when grown at home and harvested young, it produces rhizomes that are more tender, juicier, and milder than the mature, fibrous product found at retail. The outer skin rubs off easily on young homegrown rhizomes. Leaves and stalks are also edible and flavorful in teas and cooked dishes (Raintree Nursery product description; University of Florida IFAS Extension).
Zingiber officinale is hardy outdoors only in USDA Zones 10–12 — this limits permanent outdoor culture to South Florida, Southern California, and Hawaii. For the vast majority of Raintree customers, culinary ginger is grown in containers in a warm, humid indoor location (south-facing window) or in a greenhouse. It is a great outdoor plant in summer when moved outside, but must come back in before temperatures approach freezing.
Growing notes: Ginger prefers high humidity — daily misting is appreciated indoors. Use a rich, well-drained potting mix; keep consistently moist but not waterlogged. Light: bright indirect light indoors; partial shade outdoors. Avoid cold drafts and temperatures below 50°F. Plant rhizomes horizontally, just below the soil surface, with growth buds (eyes) pointing upward. Harvest young rhizomes 8–10 months after planting; or allow the plant to die back naturally in fall and harvest at that point. Replant a portion of the harvested rhizome to continue the plant the following season.
Mioga Hardy Ginger — Zingiber mioga
Mioga is the ginger of traditional Japanese cooking — but it is a fundamentally different plant from common culinary ginger, used differently and suited to a very different climate. It is grown not for its rhizome but for two other edible parts: the young shoots, which are blanched and eaten in spring, and the white flower buds, which emerge in late summer and are used in tempura, sliced as a garnish for salads and sushi, or pickled (Raintree Nursery product description; Japanese culinary tradition). Mioga has a delicate, ginger-like flavor with floral notes — nothing like the sharp heat of Z. officinale.
The key distinction for PNW and northern growers: mioga is substantially more cold-hardy than culinary ginger. Raintree's catalog lists it as hardy to USDA Zones 7–10, and some sources (WSU Extension; Missouri Botanical Garden) report successful culture in protected Zone 6 locations with mulching.

Mioga growing notes: Plant in partial to full shade — mioga performs best without direct afternoon sun. Soil should be rich in organic matter and well-drained; amend at planting with 2–3 inches of compost. Plants die back to the ground each winter and re-emerge reliably in spring; apply a 3–4 inch mulch layer in fall to protect the rhizome in colder zones. Harvest flower buds in late summer before they fully open, when they are most flavorful. Plants spread slowly by rhizome over time, eventually forming a useful ground cover in a shaded area.
Wasabi — Eutrema japonica (syn. Wasabia japonica)
Wasabi is among the most coveted — and most challenging — culinary plants a home grower can attempt. The plant is a semi-aquatic perennial native to mountain stream margins in Japan, grown for its thickened stem (rhizome), which is grated fresh to produce the intensely pungent condiment essential to Japanese cuisine. Virtually all "wasabi" served in restaurants in North America is a paste made from horseradish, mustard, and green dye — not actual wasabi. The real thing, grated fresh from the rhizome, has a heat that is sharp but short-lived, with floral complexity that horseradish entirely lacks (Japan Wasabi Association; University of Vermont Extension).
Raintree carries two wasabi options:
- Wasabi (Eutrema japonica) — the standard species offering, semi-aquatic, grown for the classic rhizome and ornamental rounded leaves.
- Mazuma Wasabi (Wasabia japonica 'Mazuma') — a named variety selected for its enlarged rhizome; slightly more productive under garden culture than the straight species.
Wasabi's requirements are specific and non-negotiable:
- Temperature: Cool — ideal range is 40–70°F. It does not tolerate heat. Temperatures below 27°F can kill the plant; frost protection is advisable in borderline zones.
- Light: Shade to partial shade — wasabi evolved under the forest canopy along streamsides and is damaged by direct summer sun.
- Water: Consistently moist soil with excellent drainage; never waterlogged. The highest-grade wasabi is grown in flowing water (semi-aquatic culture), but it grows well in garden soil or containers with consistent moisture and good drainage.
- Soil: High in organic matter; well-drained; pH 6.0–7.0.
- Planting: The crown must remain above the soil surface when planted.
- Pests: Slugs — monitor and control, particularly in the PNW.
The PNW is one of the best regions in the US for growing wasabi. The cool, humid maritime climate west of the Cascades closely mimics the mountain streamside conditions wasabi prefers — mild summers, consistent moisture, cool temperatures, and filtered light under the forest canopy. Wasabi is well-suited to the Pacific Northwest (Raintree Nursery; OSU Extension). Slug control is critical, as PNW slug pressure is among the highest in the country. Site wasabi in a shaded north or east exposure; avoid planting where afternoon summer sun can reach it.
Harvest: Wasabi rhizomes reach harvestable size after approximately 18–24 months of growth (University of Vermont Extension). Harvest by gently digging around the base of the plant and removing individual rhizomes while leaving the plant intact to continue producing. Grate fresh rhizome immediately before serving — the pungent compounds (isothiocyanates) develop on exposure to air and begin to dissipate within 15–20 minutes of grating. Both the leaves and stems are edible; the leaves can be used in salads or pickled (wasabi leaf pickles are traditional in Japan).
Chinese Toon — Toona sinensis
Chinese toon (also called Toona or Chinese cedar) is a fast-growing deciduous tree from China, related to mahogany, that is deeply embedded in Chinese culinary tradition for its intensely flavored young spring shoots. When new growth emerges in spring — a striking reddish-purple — it has a flavor variously described as onion-like, garlicky, or savory-aromatic, and is used in egg dishes, stir-fries, tofu preparations, and as a garnish (Purdue University New CROP; Food Plants International). The flavor is polarizing to those unfamiliar with it, but it is considered a delicacy in eastern China and has no real substitute in its culinary application.
Raintree's catalog notes that if left to grow unchecked, Chinese toon can reach 30 feet or more. The practical approach for home food production is to manage it by coppicing — cutting the tree back hard in late winter each year. This maintains the plant as a shrub-scale specimen, encourages abundant, easily harvested young spring shoots, and prevents it from becoming an unmanageable tree in a home garden setting. Hardy to approximately USDA Zones 5–9 (Plants for a Future; University extension records vary; the Raintree catalog listing describes it within the context of Zone 6+ use).
Growing notes: Full sun preferred; tolerates partial shade. Adaptable to a wide range of well-drained soils; tolerates slightly alkaline conditions. Fast-growing and resilient once established. Coppice in late winter by cutting all stems back to 6–12 inches from the ground; this triggers profuse new spring growth that is the primary harvest. Harvest shoots when 4–6 inches long, before leaves fully expand, for best flavor. Chinese toon spreads by root suckering — site it where this can be managed.
All true tea — green, white, oolong, and black — comes from the leaves of a single species: Camellia sinensis. The different tea types are not different plants; they are the result of different processing methods applied to leaves harvested from the same evergreen shrub. Green tea is made from minimally processed fresh leaves (heat-fixed to stop oxidation); white tea from young buds and leaves dried with minimal processing; oolong from partially oxidized leaves; black tea from fully oxidized leaves (NC State Extension; Penn State Extension; University of Florida IFAS).
Growing tea at home puts the grower in control of what may be the most variable stage in tea production: harvest timing, leaf selection, and processing. A spring flush of young leaves from a home-grown C. sinensis, processed the same afternoon and brewed the following day, produces a cup that is genuinely different from anything available commercially — not because it is necessarily better, but because it is genuinely fresh and reflects the specific growing conditions of that garden.
Tea plant varieties at Raintree
Raintree carries three Camellia sinensis varieties, each suited to slightly different climates and production goals:
Camellia sinensis 'Sochi'
Named for the Sochi region of Russia where it was developed for cold-hardiness, 'Sochi' is among the most cold-tolerant tea cultivars available for US home growers. The sinensis variety has smaller leaves than the assamica type, greater cold tolerance, and is the variety traditionally used for green and white tea production. Compact and manageable; well-suited to PNW, Pacific Coast, and mid-Atlantic gardens where full tropical heat is unavailable.
Camellia sinensis 'Blushing Maiden'
An ornamentally distinctive tea cultivar with reddish-tinged new growth that gives it its name. Native to China and Southeast Asia. Produces the same range of tea types as other sinensis varieties. Suitable for Zones 7 and warmer; valuable as both a productive tea plant and an attractive landscape shrub with small, fragrant white autumn flowers.
Camellia sinensis 'Large Leaf'
Known as the Tetraploid tea plant, 'Large Leaf' is the assamica variety — the Assam-type with notably large leaves (to 6 inches long) and vigorous growth that can reach 15 feet if unpruned. Higher yield potential than sinensis - type cultivars; preferred for black tea production. Best managed as a pruned shrub for home harvest. Suited to Zone 7 and warmer; less cold-tolerant than sinensis types (NC State Extension; UF IFAS).
Growing tea — site and soil
Camellia sinensis prefers a site with 6+ hours of sun, though it tolerates partial shade (and, unlike many Camellia species, handles more sun than is typically associated with camellias). Soil pH is critical: tea plants require acidic soil in the range of 4.5–6.0, with 5.0–5.5 optimal for most cultivars (NC State Extension; Penn State Extension). This is more acidic than most home garden soils — test before planting. Amend with elemental sulfur to lower pH in alkaline soils; peat moss or composted pine bark incorporated at planting helps maintain acidity. Tea plants will show yellowing (chlorosis) in soils that are too alkaline. Well-drained soil is essential; they will not tolerate waterlogged roots.
Established plants are moderately drought-tolerant but produce better with consistent moisture through the growing season. A 2–3 inch mulch of wood chips or pine bark helps maintain soil moisture, moderates root zone temperature, and gradually acidifies the soil as it breaks down — an ideal mulch for this species.
Harvesting and processing
The harvest unit for tea production is the "flush" — the new growth at the tip of each branch. For green and white tea, harvest the terminal bud plus the two youngest leaves below it (the traditional "two leaves and a bud" standard). For oolong and black tea, a slightly older third leaf may be included. Harvest by pinching the tip flush between thumb and forefinger; this stimulates additional lateral growth and subsequent flushes. The first spring flush, from late March through April in most US climates, typically produces the highest-quality leaves (Penn State Extension).
Tea plants should not be heavily harvested until they are at least 3 years old and well-established. In the first two years, allow the plant to build size and root system; light harvesting of a few tips to taste is acceptable but should not stress the plant.

Tea camellias perform well in the PNW in Zone 7b and warmer, and the naturally acidic, well-drained soils common in western Oregon and Washington are often already in the correct pH range for tea production — test before amending. The cool, humid maritime climate produces tea with distinctive terroir characteristics; a small but growing number of commercial tea farms operate in western Oregon and Washington, demonstrating that the region is genuinely well-suited to this crop. 'Sochi' is the recommended variety for PNW growers in Zone 7 or colder locations; 'Large Leaf' is better suited to the warmer Willamette Valley and coastal southern Oregon. Prune plants to 4–5 feet in early spring to encourage productive new shoots.
Capers are one of the great gap-fillers in the home culinary garden — they are widely used but essentially never grown outside of Mediterranean climates. The caper (Capparis spinosa) is a sprawling, semi-evergreen Mediterranean shrub that produces small flower buds on first-year branches from May through October. These buds are harvested before they open, brined in salt and herbs, and become the capers of commerce: pungent, tangy, with a flavor that bridges mustard and pepper.
If left unpicked, the buds open into showy, pinkish-white flowers with striking long lavender-colored stamens — one of the more beautiful blooms in the edible garden. The plant has real ornamental value even when not in production; the large, fragrant flowers open each morning and close in the afternoon throughout the long bloom season (Raintree Nursery product description; Mediterranean Herbs, University of Florida IFAS).
Raintree carries Spineless Caper (Capparis spinosa var. inermis), the spineless form of the common caper bush. This variety lacks the sharp stipular spines found on the standard species, making harvest and general handling considerably easier. It is self-fertile — no pollinizer required.
Zone requirements and cold hardiness
The caper bush is a Mediterranean plant and reflects that origin in its requirements and limitations. It is hardy outdoors to approximately 18°F and is rated for USDA Zone 8 and warmer as an outdoor perennial. In Zones 7 and colder, it must be grown in a container and overwintered in a frost-protected but cool location (unheated greenhouse, garage, or similar) when temperatures threaten to fall below 18°F (Raintree Nursery; NC State Extension).
The caper bush's heat and drought tolerance are exceptional — it evolved in the rocky limestone hillsides and cliff faces of the Mediterranean basin, where summer heat is intense and rainfall essentially stops for months. This makes it well-suited to hot, dry garden conditions where other culinary plants struggle.
Site, soil, and growing notes
Capers demand conditions that are the near-opposite of most culinary plants:
- Sun: Full sun — the more heat accumulated, the better
- Soil: Dry, well-drained, alkaline to neutral — sandy or gravelly soils are ideal; heavy clay or poorly draining soils will kill the plant; pH 7.0–8.0 preferred
