Elderberry Bushes
One of the most productive, adaptable, and wildlife-friendly fruiting shrubs you can grow — but the fruit requires cooking before eating. Matching species to climate and understanding how to manage their vigorous, suckering habit makes all the difference.

Why grow elderberry?
Elderberries (Sambucus species) are among the most versatile and accommodating fruiting shrubs in the home garden. Fast-growing and cold-hardy across a wide range of climates, they produce generous clusters of small, dark berries and large, fragrant flower heads every year — often beginning in just their second or third season. Few shrubs offer so much reward for so little demand.
The berries are sweet-tart and richly flavored — not for fresh eating, but spectacular when cooked down into syrups, juices, jams, jellies, and wine. The flowers are equally useful: prized for fritters, elderflower cordials, and soups, they have a delicate, muscat-like fragrance. Elderberries have been cultivated for thousands of years and remain deeply embedded in culinary and herbal traditions worldwide.
Beyond the harvest, elderberries are exceptional habitat plants. Dense flower clusters attract and feed pollinators in early summer; the ripe berries are extremely popular with birds. If wildlife benefit is part of your planting goals, elderberry delivers on both counts simultaneously.
One critical point before planting: all parts of the plant — unripe berries, raw ripe berries, leaves, bark, and roots — contain compounds that can cause nausea and stomach distress if consumed raw. Cooking neutralizes them. Never eat raw elderberries or juice them fresh. The flowers are an exception — they are safe to eat fresh.
Unripe and ripe raw elderberries, as well as leaves, bark, and roots, contain cyanogenic glycosides. Consuming raw fruit or raw fresh juice can cause nausea, vomiting, and stomach cramping. Elderberries are also enthusiastic spreaders. American and European elderberries sucker readily from their roots, forming multi-stemmed clumps and — if not managed — spreading into adjacent areas. This trait is an asset in a larger naturalized planting and easy enough to control with annual mowing or removal of suckers, but it is important to anticipate when siting them near a lawn or garden bed.
The three species Raintree carries
Raintree offers three distinct elderberry species. They differ meaningfully in size, native range, cold hardiness, and — critically — their pollination behavior. Choosing the right species for your climate and space is the most important decision before you plant.
American Elderberry — Sambucus canadensis
The workhorse species for most of the US. Native to eastern North America; widely adapted from Zone 3 to Zone 9, depending on the cultivar. Grows 10–15 ft tall and 5–8 ft wide; manageable at 6–10 ft with annual pruning. Produces large clusters of dark purple-black berries in late summer to early fall. Fast-growing and very cold-hardy; suckers freely. All commercial American elderberry cultivars (Adams, Bob Gordon, Nova, York, Johns, Wyldewood) are partially self-fruitful but produce significantly better yields with a second American elderberry cultivar planted nearby. Do not use European varieties as pollinators — cross-pollination between species is unreliable; pair within the same species (Wisconsin Extension; USU Extension).
European Elderberry — Sambucus nigra
Native to Europe; widely grown as both a fruiting and ornamental shrub. Generally zones 4–9, though some selections are less cold-hardy than American elderberry. Grows 10–15 ft; tree-like habit compared to the more multi-stemmed American species. Berries are similar in color and use to American elderberry; flavor varies by cultivar. Many European selections (Black Lace, Black Beauty) are grown primarily as ornamentals with bonus fruit production. European elderberry is partially self-fruitful — the species has hermaphroditic flowers — but yields improve significantly with a second European variety for cross-pollination. Pair European with European, not with American varieties (PFAF; Wisconsin Extension).
Blue Elderberry — Sambucus nigra ssp. caerulea
Native along the western coast of North America; the Pacific Northwest's native elderberry. Zones 4–9. More tree-like in growth habit than the other two species, potentially reaching 20 ft or more — plan accordingly. Produces clusters of dusty blue-gray berries (smaller than American or European selections) with a powdery blue bloom on the skin. Fully self-fertile — no pollinizer required. The right native choice for PNW growers wanting a lower-maintenance, large-form plant. Note: due to the Valley elderberry longhorn beetle (a federally threatened species that uses blue elderberry as a host), pruning blue elderberry in California's Central Valley is regulated by the US Fish & Wildlife Service — check local restrictions if in that range.
The older growing literature sometimes states that American and European elderberries are "not self-fertile." A more accurate description is that they are partially self-fruitful: the flowers are hermaphroditic, so a single plant can set some fruit on its own. However, cross-pollination from a different variety of the same species consistently produces significantly larger clusters and better fruit set. Always plant at least two varieties of the same species (American with American, European with European) for reliable, productive harvests. Wisconsin Extension and USU Extension both confirm this recommendation.
All three species perform in the PNW, but they serve different purposes. S. caerulea (blue elderberry) is the native species — easy, self-sufficient, and large. S. canadensis (American elderberry) cultivars like Bob Gordon and Wyldewood offer the most consistent, heavy berry production for making juice and syrup. European selections like Black Lace provide ornamental value alongside fruit. For the highest fruit yield, choose American elderberry cultivars and plant at least two different varieties.
Site selection
Sun
Elderberries need at least 8 hours of direct sunlight measured in early summer (late June through early August) for best fruit production. Sufficient sun exposure drives flower bud initiation, sugar development, and flavor in the fruit. Plants will tolerate partial shade, but production declines proportionally — a shadier site means fewer, smaller berry clusters. In particularly hot-summer climates, afternoon shade can reduce heat stress without significantly affecting yield.
Soil
Elderberries are highly adaptable and will grow in a remarkably wide range of soil types, from sandy to clay loam. They perform best in fertile, moist, well-drained soil with a pH of 5.5–6.5 (USU Extension; Indiana Berry). Slightly acidic conditions in the lower end of that range suit them well. They are tolerant of periodically wet conditions and will do fine near a rain garden, stream, or swale — they are commonly found along streamsides in the wild — but do not thrive in permanently waterlogged soil.
Elderberry roots are shallow, which makes them susceptible to injury from deep cultivation. Amend the soil with compost before planting rather than trying to work around established roots later. Have your soil tested before planting to identify any pH or nutrient corrections needed.

For cross-pollination between American or European elderberry varieties, plant the two varieties no more than 100 feet apart with no significant obstructions between them (Raintree standard 100-foot guideline for bee-carried pollen).
Managing the suckering habit
American and European elderberries spread by root suckers, which emerge from the soil around and beyond the base of the plant. In a naturalized hedgerow or large garden setting this is typically welcome — the plant fills in and creates a productive thicket. In a more managed garden or near a lawn, suckers need annual control. The simplest method is to mow or cut suckers that emerge beyond the desired footprint before they harden into woody stems. Digging the suckers out with their roots is effective for tighter control, and rooted suckers transplant easily if you want to establish a new plant.
Pollination
Elderberry flowers are hermaphroditic — each flower has both male (stamens) and female (pistil) parts — so individual plants can technically self-pollinate. In practice, however, cross-pollination between two different varieties of the same species consistently produces larger clusters, better fruit set, and higher yields. The improvement with cross-pollination is significant enough that planting a single variety as a standalone fruiting plant is not recommended for anyone prioritizing a real harvest.
The key rule is to match pollinators by species:
- American elderberry varieties should be cross-pollinated with other American elderberry varieties — not with European selections.
- European elderberry varieties should be cross-pollinated with other European elderberry varieties.
- Blue elderberry is fully self-fertile — no second plant is required, though yield can still benefit from nearby blue elderberry plants.
Plant cross-pollinating varieties no more than 100 feet apart with no substantial barriers between them. Bees are the primary pollinators of elderberry; flies also play a role with European elderberry in particular. Avoid applying any insecticides during the bloom window — typically late May through July depending on species and location — to protect pollinator activity.
American (S. canadensis) and European (S. nigra) elderberries bloom at overlapping times and may occasionally cross, but cross-species pollination is unreliable and should not be counted on for fruit set. Choosing varieties
Within each species, variety selection determines ripening timing, berry cluster size, and cold hardiness. Most elderberry cultivars were selected in the northeastern US or eastern Canada from S. canadensis; newer selections have expanded the range of available flavors and regional adaptations. Unless you are planting blue elderberry, always plant at least two different varieties from the same species.

Soil preparation and planting
Soil preparation
Test your soil before planting. Elderberries prefer a pH of 5.5–6.5; amend with ground limestone to raise a too-acidic soil or elemental sulfur to lower an alkaline one. Contact your local cooperative extension office for region-specific amendment rates. Work 1–2 inches of plant-based organic matter (compost, aged wood chips, or coconut coir) into an area 1.5–2 times the width of the planting hole and up to 12 inches deep. Do not use garden soil in containers.
Elderberry roots are shallow — typically within the top 12–18 inches of soil — and sensitive to deep cultivation damage. Improve the soil thoroughly before planting; it is much harder to amend around established, shallow-rooted plants.
In heavy clay soils, a raised planting mound or raised bed significantly improves drainage and reduces the risk of root suffocation in wet winters.
Planting
Plant container-grown elderberry in early spring after the last frost date, or in fall (zones 6 and warmer) at least 6 weeks before the first hard freeze. Dig a hole twice as wide as the root ball and approximately as deep. Backfill with amended native soil; set the plant at the same depth as it was in the container. Do not add fertilizer directly to the planting hole — concentrated fertilizer can burn tender new roots. Water thoroughly after planting and apply a 2–4 inch mulch layer (straw, leaves, or wood chips), keeping mulch pulled back 4–6 inches from the base of the canes to discourage vole activity and crown rot.
Western WA and OR soils are often already in the 5.5–6.5 pH range that elderberries prefer — test before amending. Our wet winters mean that adequate drainage is the more critical concern than soil pH in most PNW locations. Avoid low spots where water sits after rain. A generous compost addition at planting and a maintained mulch layer support fast establishment in the typically cool, wet PNW spring.
Growing in containers
Elderberries can be grown in containers, though their vigorous growth habit requires a large pot and consistent management. Use a minimum 20-gallon container; larger is better for multi-season production. Varieties that fruit well on 1- and 2-year canes — particularly Wyldewood and Bob Gordon — are the best choices for container culture.
Use a quality potting mix with added compost; do not use garden soil. Gradually increase container size over the first several years rather than starting in an oversized pot — this encourages healthy root development without waterlogging the excess soil volume. Ensure excellent drainage — elderberry will not tolerate waterlogged roots even in containers.
Container elderberries require more frequent watering and more regular fertilization than in-ground plants. In Zone 6 and colder, container roots have no insulation from surrounding soil — move containers to an unheated but protected structure (garage, barn, shed) for winter to prevent root freeze. Monitor for suckering and remove suckers from the drainage holes or container walls as they appear.
Watering and feeding
Watering
Target approximately 1 inch of water per week over the root zone — roughly ¾ to 1 gallon per square foot of soil surface area, or 7–10 gallons per week for a typical 3-foot-diameter planting area. Do not water lightly each day; this produces a wet surface and dry root zone. Instead, water deeply once or twice a week and allow the top inch or two to dry between waterings. The soil should remain moist to about 12 inches depth. In rainy climates like the PNW, supplemental irrigation becomes most critical in July through September as summer dry periods coincide with berry development and ripening.
In hotter locations, a 2–4 inch mulch of straw, bark, or wood chips significantly reduces irrigation frequency by retaining soil moisture. Apply mulch over the root zone while keeping it back from the base of the canes.
Fertilization
Use an all-purpose balanced fertilizer or apply 2–3 inches of well-rotted compost over the root zone each spring before new growth begins. If plants are producing a foot or more of new growth annually with healthy, dark green foliage, they likely need little or no additional fertilizer. Avoid applying nitrogen-rich fertilizer after early summer — late-season nitrogen pushes soft new growth that is more susceptible to winter cold damage. Excessive fertilizer can increase disease pressure and reduce fruit quality.
Pruning and cane renewal
Elderberry produces its best fruit on one- and two-year-old canes; some fruit is produced on three-year-old wood, but productivity declines significantly after that. Canes older than three years become less fruitful, more prone to winter injury, and crowd out the newer, more productive growth. Annual pruning to renew the cane structure is the key management task for consistent, heavy berry production (USU Extension; Wisconsin Extension; Stark Bro's).
Prune while plants are dormant — late winter to early spring, before growth begins. In the PNW and much of the US, February through March is the typical window. Do not prune in freezing weather. Sanitize pruning tools between plants to avoid spreading disease.
Annual pruning — step by step
Once plants are past their establishment phase, the annual dormant pruning follows a consistent pattern (Wisconsin Extension; USU Extension; Stark Bro's):
- First, remove all dead, damaged, or diseased canes at ground level — these are the easiest to identify and address first.
- Next, remove all canes more than three years old. These produce the least fruit and drain the plant's energy. Three-year-old canes are the largest in diameter; they can be identified by their thicker bark and, often, by counting back from the current season's growth.
- Thin the remaining canes to 6–8 of the most vigorous, aiming to maintain an equal number of 1-, 2-, and 3-year-old canes (approximately two to three of each age class).
- Finish by tipping back any weak or excessively long canes to encourage bushier, more manageable growth.
A mature elderberry plant really only needs 6–8 well-spaced canes to produce heavily. Leaving more than that produces a crowded, less productive plant with more disease pressure from poor air circulation.
Suckering is distinct from cane renewal pruning. Suckers are new shoots that emerge from the root system beyond the base of the plant, sometimes several feet away. They should be removed by mowing or cutting as they appear through the growing season. If you want to propagate new plants, allow a sucker to develop roots, then dig and transplant it in early spring. Elderberry also propagates easily from hardwood cuttings taken in early spring before bud break (10–12 inches long, from the prior season's growth).
California Central Valley growers: blue elderberry (S. caerulea) and red elderberry (S. racemosa) are host plants for the Valley elderberry longhorn beetle (Desmocerus californicus dimorphus), federally listed as threatened. Pruning stems more than one inch in diameter in the beetle's range is regulated; pruning of smaller stems must be done between November and February within the native range. Harvest
Elderberries ripen mid-summer to early fall depending on species, variety, and location. At Raintree's location (north of Mount St. Helens, WA), American elderberry varieties typically ripen in August through September; European selections ripen on a similar or slightly later timeline. Blue elderberry ripens August through September in the PNW.
Ripe elderberry clusters turn a deep purple-black (or dusty blue-gray for blue elderberry) and the pedicels — the individual berry stems within the cluster — often turn red or deep pink when the fruit is at peak ripeness. Clusters that are ripe detach easily from the main stem with a gentle tug or twist. Harvest entire clusters by cutting the cluster stem; this is far more efficient than picking individual berries.
After harvest, remove the individual berries from the cluster stems using a fork, your fingers, or by freezing the clusters briefly and then shaking — the frozen berries release easily. The cluster stems (pedicels and rachis) should not be cooked or consumed; remove them as thoroughly as practical.
All elderberry species contain cyanogenic glycosides in the raw fruit, leaves, bark, and roots. Raw berries and raw fresh juice can cause nausea and vomiting. Cooking — whether making syrup, jam, jelly, juice, or wine — deactivates these compounds. Flowers are the exception and are safe fresh. When in doubt, cook it. (OSU Extension)
Primary uses
- Elderberry syrup:Â The most popular home use; simmered with water, honey or sugar, and often spices. Shelf-stable if properly canned; otherwise refrigerate.
- Juice:Â Pressed after cooking; excellent base for jelly or fermentation.
- Jams and jellies:Â High natural pectin content makes elderberries easy to gel.
- Wine:Â A traditional elderberry use in both European and American traditions.
- Fruit butter and leather:Â Blend cooked elderberries with applesauce for fruit leather or butter.
- Elderflowers:Â Harvest clusters in full bloom; use fresh for fritters, infused into cordials, or dried for tea.
Common problems
Deer browse elderberry readily, particularly the large, soft leaves and tender new shoots. Young plants in their first year or two are especially vulnerable and can be pulled from the ground or stripped entirely.
- An 8-foot woven wire deer fence is the most reliable long-term protection
- Hardware cloth cages protect individual young plants during establishment
- Commercial repellents provide short-term deterrence but require reapplication and are inconsistent season-long
- Once plants are large and established above browse height, deer impact typically decreases
Ripe elderberry clusters are extremely attractive to many bird species, including robins, cedar waxwings, catbirds, and thrushes. Entire clusters can be stripped rapidly around ripening. In some plantings this is welcomed as wildlife habitat; for those wanting to harvest, protection is needed.
- Bird netting draped over the plant or individual clusters as they ripen is the most effective protection
- Reflective Bird Scare Tape can provide some deterrence, particularly early in the season
- Harvest clusters promptly when ripe — do not leave them hanging; ripe clusters are cleaned out quickly
- If you are planting elderberry partly for wildlife, consider leaving some clusters unharvested deliberately
Voles and mice chew bark at soil level in a band from ground level up to several inches, typically under snow cover or dense mulch. Rabbits damage canes up to 8 inches above ground. Girdling kills the cane above the damage point.
- Keep mulch pulled back 4–6 inches from the base of canes at all times — mulch against the crown is a vole corridor in winter
- Keep grass and vegetation cleared 1–2 feet from plant bases
- Wrap young canes with vinyl tree guards or hardware cloth before snow cover arrives; remove in spring
- Check for damage at the base of canes in early spring as snow recedes
- Elderberry tolerates damage better than many woody plants due to its ability to regenerate from the crown and roots
Several aphid species feed on elderberry, causing leaf curl, distorted new growth tips, and sooty mold from honeydew. Infestations are most problematic on young plants or during dry, warm weather. Established plants usually tolerate moderate infestations without serious crop impact.
- Natural predators (lady beetles, parasitic wasps, lacewings) often provide adequate control — encourage them by avoiding broad-spectrum insecticides
- A strong stream of water knocks aphids from stems and new growth
- Insecticidal soap is effective for heavier infestations; follow label and avoid bloom period
- Control ant populations, which protect aphid colonies from natural predators
Rust diseases appear as orange-yellow lesions on the upper leaf surface and orange spore structures on the undersides. Rust diseases require an alternate host plant (many rusts affecting berries in the eastern US require an alternate host within a certain radius). Prevalence varies significantly by region.
- Contact your local cooperative extension office to identify which rust diseases are common in your area and their alternate hosts
- Remove and destroy infected plant parts; do not compost
- Copper fungicide applied after harvest and before fall rains can help prevent overwintering
- Improve air circulation through pruning to reduce humid microclimates where rust thrives
BMSB has spread across most of the US and overwinters in structures near orchards. It can cause corky brown spots and decay in elderberry clusters. Elderberry is not a preferred host but may be affected in areas with high BMSB pressure, particularly as other crops are harvested.

- Harvest clusters promptly at ripeness; remove dropped or damaged fruit
- If found overwintering in your home, vacuum rather than crushing — crushing releases the defensive odor
Seasonal care calendar
- Annual dormant pruning — late winter (February–March in most of the US; December–February in colder regions) while plants are still dormant and before growth begins (USU Extension)
- Remove all canes older than three years at ground level; remove dead, damaged, and diseased wood; maintain 6–8 canes per plant balanced across 1-, 2-, and 3-year wood
- Pull mulch back from cane bases; check for vole or rabbit damage; replace trunk guards if worn
- Inspect site drainage after winter rains — standing water around elderberry roots is a problem to address in spring before planting season
- Apply balanced fertilizer or 2–3 inches of compost over root zone before new growth begins
- Restore mulch to 2–4 inch depth after fertilizing; keep back from cane bases
- Begin removing new suckers as they emerge from the root system beyond the plant's footprint
- Plant new elderberry bushes after last frost date — spring planting is preferred
