Wasabi is a semi-aquatic perennial with a thick rhizome and rounded, kidney-shaped green leaves. It produces elegant 4-petaled white flowers above its foliage. All parts of this plant from Japan can be consumed, with both leaves and flowers being edible when cooked. The rhizome takes about 15-24 months to develop before it is ready for harvest. It is recommended to harvest the rhizome in its second or third year while it is fresh.
